Today featuring both White Bean and Black Bean, via 5 different soups, that are meatless as well… And perfect for this time of year!

1. TOMATO AND VEGETABLE WHITE BEAN SOUP

Including ingredients: white beans (canned), red potatoes, kale (or other sturdy green), yellow squash or zucchini, carrots, diced tomatoes (fire-roasted), tomato sauce, veggie stock, onion (white or yellow), oil (such as olive, grape seed or coconut oil), garlic cloves, dried basil, dried oregano, garlic powder, (+).

2. FRENCH-ONION-STYLE WHITE BEAN SOUP

From “Food & Wine” …

Including ingredients: cannellini beans (canned), fennel bulb, onion, olive oil, vegetable stock or broth, garlic cloves, crushed red pepper, dried oregano, (+); optional sourdough bread & grated Parmigiano-Reggiano cheese for serving.

3. BLACK BEAN, SWEET POTATO, AND RED QUINOA SOUP

Including ingredients: black beans (canned), red quinoa, sweet onion, jalapeno, sweet potato, spinach or kale leaves (optional), vegetable broth, oil, garlic cloves, ground cumin, chili powder, ground coriander, cayenne pepper or red pepper flakes, (+); optional toppings such as: avocado, corn chips, cilantro, cashew cream, lime juice, tomatoes or salsa, green onion.

4. SLOW COOKER BLACK BEAN SOUP

Ingredients: black beans (canned), red bell peppers, carrots, onion (yellow or white), vegetable stock, garlic cloves, jalapeno peppers, bay leaf, ground cumin, chili powder, cayenne, (+); optional topping(s) such as: chopped fresh cilantro, crumbled corn tortilla chips, diced avocados, sour cream and/or shredded cheese (dairy-free, if making this soup vegan).

5.  BLACK & WHITE BEAN SOUP

Including ingredients: navy or cannellini beans (canned), black beans (canned), beef [or vegetable] broth, diced tomatoes, onion, garlic cloves, olive oil, fresh parsley, fresh or dried basil, (+).
